Advanced Cicerone & PhD Dr. Asa Stone talks climate change & lambic production
Aug 14, 2019Dr. Asa Stone is one of the other ~120 Advanced Cicerones. She's also a New Mexico-based PhD of Experimental Psychology who does research on the human dimensions of ecological issues, such as how to effectively promote sustainable behavior. On top of all that, Asa is a beer educator with a desire to help others gain a deeper appreciation of beer. I had the treat of sitting down for a chat with Dr. Asa Stone in Amsterdam during Carnivale Brettanomyces #9.
Long a fan of great beer, Dr. Stone found a way merge her appreciation of beer, especially lambic, and her background as a scientist through her climate change work. Asa, and her scientist husband, Mark Stone, have been working for several years with Jean-Pierre van Roy of Cantillon fame to better understand how Earth's changing climate will affect lambic production in Belgium. Hotter weather causes changes to the prominent microflora that ferments lambic and thus its chemistry and flavor profile. Dr. Stone and lambic producers want to know what to expect in the future and what options there may be for dealing with climate change issues.
We talk about Asa's ongoing climate change research, the beer-focused courses she's teaching in New Mexico, and her experience as a woman and minority in the beer community. As we are both beer educators, I also talk a bit about my goals for where I'm taking Beer Scholar, which I haven't shared much about yet publicly.
